This was a project for Christmas 2011. I wanted to start a collection of favorite recipes and print them for my kids, now that they are grown. As I typed the recipes, I added them here, so they would be easily accessible in the future for additions and modifications.

Stuffed Mushroom Bites




Preheat oven to 350 degrees.


Line cookie sheet with 35-40 mushroom caps(keep stems for the stuffing) that have been gently brushed/wiped off. Brush with melted butter.


Mix:
1 block of softened cream cheese 
1/2 c freshly grated parmesan-reggiano cheese
2 tbsp finely chopped scallion
2 tbsp butter
1 tsp olive oil
15 finely chopped mushroom stems
splash of red wine (optional)


Stuff mushrooms with mixture, then


Mix:
4 tbsp Italian bread crumbs
1/2 tsp oregano
1 tbsp chopped parsely
dash of salt and pepper


Sprinkle over stuffed mushrooms


Bake for 15-20 minutes.
