1 can black-eyed peas (rinsed and drained)
1 can black beans (rinsed and drained)
1 can shoe peg corn (drained)
1 can diced tomatoes (drained)
1 small red onion, chopped fine
1 tsp salt/1 tsp pepper
cilantro to taste
1/2 small bottle Italian dressing
Mix together, cover and refrigerate at least 4 hours. Serve with tortilla chips.
*Also good warmed and mixed with rice or pasta*
